INGREDIENTS (4 people)
- 1 medium octopus
- 1kg potatoes
- Coarse salt (to taste) (sea salt)
- Sweet Spanish paprika
- Extra virgin olive oil

HOW TO MAKE
-Put a pot with plenty of water on the stove. When it boils, put in the octopus. Cook on medium heat for about 30 or 35 minutes, or even 40 minutes if it is very large.
- While we cook the octopus, peel the potatoes and cut them in half.
- When the octopus is done, take it out and place it to the side. In the same water, cook the potatoes for 15 minutes. Cut the octopus into pieces with the help of kitchen scissors, and the potatoes into slices of one centimetre or so.
Serve it in a fountain… or even better, on a wooden plate, just as they do in Galicia. Put salt on top, sprinkle paprika and a bit of extra virgin olive oil.
